To me, no matter how gross, bland, and simple a dish is, if it occupies that corner of my heart alongside family, childhood memories and cherished loved ones and times, it will always be a 10/10.

This poor man’s bánh mì is one of those. Crispy pan-fried spam and egg sandwiched between a base spread of pâté (pork liver spread) and laughing cow cheese (a seemingly low budget but velvety Swiss cheese) and a top dressing of pepper and Maggi (soy sauce for Vietnamese OGs) – cause it can never be too salty.

I hadn’t had this in years cause it’s been a while since my last slow ‘n sleepy weekend morning with my family, but all it took was a single glance between the two of us, and a whiff of that sweet n salty grease – and that unforgettable gum cutting crunch – to snap me back to a complete state of comforted bliss and assurance that everything is okay and everyone I love is here.

Ingredients

  • 1 1 loaf bánh mì

  • 2 tbsp 2 pâté

  • 2 pieces 2 laughing cow cheese

  • 2 large 2 white eggs

  • 1 tbsp 1 black pepper

  • 1 tbsp 1 Maggi soy sauce

Instructions

  • Slice bread in half and toast to desired crispiness.
  • Heat pan on high heat.
  • Once pan is hot, oil and add eggs.
  • Fry for one minute, then turn off heat.
  • Spread pâté and laughing cow cheese on bread and lay eggs to form open-faced sandwiches.
  • Sprinkle pepper and top with Maggi. Enjoy!
