Durian Mochi Brûlée

To me, Durian is more polarizing than Christmas trees in July, country music, Lebron James, instruction manuals, pineapple on pizza, the Dallas cowboys, Hawaiian shirts… and magnets.

If you’re not careful with this weapon of mass destruction you might even cause a public emergency. That was me in 3rd grade, during a TAKS test, when I pulled out some durian wafers and caused a gas leak panic that brought in the whole fire department. I definitely said not a single word and just enjoyed the show with my lil treats.

Have y’all had the pleasure of experiencing this creamy, arguably pugnacious, nature’s ice cream? Like many other fruits, there are so many unique and complex way to incorporate durian into all types of food, if you can get over the fact that it is what some deem to be the most pungent fruit in existence. Like here! In a mochi, which I also brûléed. If not, add it to your bucket list!

Ingredients

  • 1 cup 1 glutinous rice flour

  • 1/4 cups 1/4 sugar‹‹‹‹

  • 2 tbsp 2 cornstarch

  • 1 cup 1 whole milk

  • 1 tbsp 1 oil

  • 4 pieces 4 durian fruit

Instructions

  • Whisk together glutinous rice flour, sugar, cornstarch, and milk until smooth.
  • Cover mixture with saran wrap and microwave on high for 2 minutes.
  • Stir, cover again, then microwave 2 more minutes.
  • If the dough is milky, rather than slightly translucent – microwave another minute.
  • Let dough cool, then add oil and knead until smooth.
  • Divide dough into portions on parchment paper.
  • Wrap durian fruit.
  • Melt sugar in pan, coat mochi, and allow to cool.
